Sorghum bicolor L. is the scientific name for sorghum, a crop belonging to the Gramineae family that is abundant in carbs. Known as “The King of Millions,” it is a staple crop for millions of people living in semi-arid regions. The primary component is starch, which breaks down more slowly than other grains and has a low digestibility of fat and protein. The development of non-communicable diseases is largely impacted by oxidative stress and excessive generation of free radicals. Phenolic compounds produced from sorghum regulate the expression of the phase II enzyme. Through their conversion into safe and excretable metabolites, highly reactive electrophilic species (RES) are neutralised and serve as the body’s natural defence against oxidative stress.
